"I cannot imagine that an educator of your stature, knowledge, passion and drive could be anything less than the greatest asset within ANY organization. Your Crimes Against Humanity and Holocaust Studies classes brought an awareness and accountability to our school culture it had not known until you. Your garden is beautiful and will always be a reminder and reflection of the light that you turned on in so many. Thank you for your years of service and may God bless you and shine a light on your path."

"When teaching about the Holocaust to secondary school students one of the greatest challenges is to find a textbook to complement and supplement the classroom lessons. Most of the stuff out there is well-meaning but often full of gratuitous and graphic violence at the expense of discussing historical origins and context. Until now. "Beyond Auschwitz: Holocaust & Human Rights Education for the 21st Century" by Carolina Simon is an exception to this rule. It is specifically geared for students from grades 8 -12 and utilizes a student-centred approach of humanizing the victims of this genocide. This interdisciplinary text is a great help in educating today's student in the lessons of the Holocaust."

"Hi Ms. Simon, I wanted to say thank you for all that you have taught me and for influencing me positively throughout the year. This class was my favorite class. Not just because of my friends, but mostly due to the lessons and methods that you used to teach us. I enjoyed voicing my opinion and stating facts to back my opinions up in our Socratic seminars. I enjoyed being able to collaborate with my teammates in our group projects. I loved ... I could articulate my ideas and the intricacies of my opinions without judgement. I was able to accomplish this because you were my teacher. I am writing to you to let you know that you are making a difference and to please continue what you are doing for our future and to keep expressing your thoughts on anti-semitism. Thank you very much for everything. I will miss you!"
